I don’t know about you but I run out of the house “late” every morning with just a cup of coffee. If I am lucky, we have stocked up on yogurt or something easy I can grab on my way out. These overnight oats are my new obsession. This last week I made 3 different flavors but this one was our favorite!
Once you have the basic ingredients (oats, chia seeds, and milk) you can make different flavors with the other ingredients that you have on hand. We also made a strawberries & cream overnight oats from VeguKate, and an apple cinnamon over night oats from My Frugal Adventures. There are endless varieties and flavor combinations that you can make with just a few simple ingredients.
This is a simple and healthy breakfast that you make the night before for an easy grab and go in the morning! They do stay good in the refrigerator more then one day too so you can double the batch for two days of yummy breakfast.

Peanut Butter Banana Overnight Oats – Adapted from Domesticate Me
Yield: 2 Servings
1 Large Ripe Banana, mashed (about ½ cup) (save a few slices for garnish on top)
¼ Cup Creamy Peanut Butter (I used honey roasted peanut butter and didn’t add any additional sweetener)
1 Cup Rolled Oats
1 Cup Milk (I used cashew milk because that is what I had available but you can use any kind of milk, dairy or non-dairy works great!)
2 Tablespoon Chia Seeds
1/4 Teaspoon Vanilla
1/2 Teaspoon Cinnamon
1 Teaspoon Light Agave or Honey
- In a medium bowl, mash your banana with a fork.
- Add the remaining ingredients to the bowl and mix until well combined.
- Pour the mixture into two airtight containers and add extra banana slices on top.
- Refrigerate for at least 3 hours or overnight.
- When ready to eat, give the oats a stir, and enjoy!!
